Favorite Sweet Potato Recipe
Hiii! Here's my favorite sweet potato recipe that I've been making over and over each week. It's super simple, and you can eat it however you like! I usually make a big batch on Sundays then bring some to work for lunch each day throughout the week.
- 2-3 Sweet Potatoes (or however many you'd like)
- Olive Oil
- Garlic Powder
- Salt & Pepper
- Chard or Kale (optional)
Preheat your oven to 400 degrees
Cut the sweet potato into even sized cubes
In a bowl, toss the sweet potato (and chard or kale) in the olive oil and spices until each is coated evenly. Use however much you'd like of each seasoning - I like a lot :)
Transfer onto a baking pan and drizzle with a little honey to bring out the sweetness!
Bake for 45-50 minutes, turning once with tongs halfway through the baking process (cook longer or shorter if you want them more burnt or less!)
